Ingredients:
- 1 egg
- ½ cup natural almond butter
- 1 tbsp maple syrup
- 2 tsp vanilla extract
- 1 cup rolled oats (other similar recipes can use flour instead of rolled oats)
- 1/2 cup coconut sugar (or cane sugar)
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chocolate chips or chopped walnuts
- 1 tsp baking soda
Instructions:
- Set your oven to preheat at 350° and prepare a large baking sheet by lining it with parchment paper or coating it with nonstick spray.
- In a sizable bowl, combine the egg, almond butter, maple syrup, and vanilla by whisking them together.
- Into the bowl with the mixed wet ingredients, incorporate the oats, sugar, baking soda, cinnamon, and salt, stirring until well combined. Finish by folding in the chocolate chips. Note that it’s normal for the mixture to have a very moist and soft texture.
- Dampen your hands to prevent sticking, and then use them to shape the dough into balls. Place these balls 2″ apart on the prepared baking sheet, and then gently flatten them into cookie shapes using your hands.
- Allow the cookies to bake for a duration of 10-12 minutes. Once done, let them rest on the baking sheet for a brief 60 seconds before carefully moving them to a cooling rack. The cookies will have a soft texture when first removed from the oven but will become firmer as they cool. Serve and enjoy!
